With a family as big as ours, we need meals that are inexpensive to make. I mean I want down right cheap dinner recipes. And they can be hard to find. Especially when I want kid-friendly dinner recipes. When I stumbled across this beef pie recipe when my boys were little, about 17 years ago, it was such a hit that it became a staple. I mean, even Anthony loved it, which never happens.
These days I make this dinner for Don and myself, the girls, the boys and the grandkids when they are here. Everyone always ravs about it. I bet your family will love it too. No one has to know that it is a simple beef recipe that doesn’t cost you a fortune.
1lb ground beef (at least 85%)
1/4 cup garlic bread crumbs
1/2 onion diced
1/2 teaspoon sage
1/2 teaspoon salt and peppers
mashed potatoes, either home-made or packaged
2 slices of cooked bacon
tomatoes- if desired (You won’t see these in the pictures, my family doesn’t like them)
1. Heat oven to 350 degrees. In a bowl, mix beef, onion, bread crumbs, seasoning, and egg. Press into an ungreased 2 quart glass baking dish. Or use these baking pan liners. It makes clean up a snap. Plus they are reusable.
2.After preparing the mashed potatoes, flavor with cheese. Then spread evenly over the meat mixture. Sprinkle more cheese, about a cup, over the top.
3. bake in a casserole dish, about an hour, until the meat is cooked and reaches an internal temperature of 160 degrees. Sprinkle with chopped bacon, green onion, and tomatoes
