I love muffins. I was on a huge blueberry muffin kick for months. I came across this fresh strawberry muffin and couldn’t wait to try it. But of course everything went wrong. First, I went to make them and my son had eaten all my strawberries, something I would normally never complain about. The next time, we were going to go strawberry picking, and that turned out to be a complete bust. So I finally bought some more and made them. They are super simple, and so moist and yummy. So I thought I would share the recipe with you to try for yourself. I would love to hear what you think of them.
Fresh Strawberry Muffins
1/2 cup butter, softened
3/4 cup sugar
2 cups flour
2 tsps baking powder
1/2 tsp salt
1/2 cup milk
1/2 tsp vanilla
1 1/2 cups chopped strawberries (fresh, not frozen)
3 tsps sugar
1/2 tsp cinnamon
Cream butter and sugar. Add egg and mix well.
Sift flour, baking powder, and salt in a small bowl. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries.
Spoon batter into muffin pans.
Combine sugar and cinnamon and sprinkle over muffins.
Bake at 400º for 20-25 minutes.
Makes one dozen muffins.
