Guiltless Appetizers: Healthy Buffalo Chicken Dip
Fall is officially here and there’s no better part of the season than everyone’s favorite American pastime — football. However, for most women, the food, drinks and socializing at football gatherings and tailgates is far superior to the actual game itself. And unfortunately, unlike men, who can eat whatever they want and never gain a pound, all that food and alcohol isn’t exactly easy on our physiques. Between the empty calories from bottle after bottle of beer and the munchies you get from sitting around with a dozen appetizers taunting you from every angle, it’s hard not to give in. Luckily, there are ways to have your cake and eat it too.
If you’re trying to watch your weight, you no longer have to boycott the dreaded apps table all together. Believe it or not, there are plenty of mouthwatering appetizers that are not only amazing, but are also much healthier than they’re higher calorie counterparts. Point in case: healthy buffalo chicken dip. Buffalo chicken wings are pretty much a staple at any football viewing or tailgate — and this dip is so good that it’s sure to be a staple at all your future football events.
8 oz. 1/3-less-fat cream cheese, softened
½ c. fat-free ranch dressing
1/3 c. Frank’s buffalo wing sauce
1 ½ c. shredded rotisserie chicken breast, skin and bones removed
1 c. reduced-fat shredded Colby-Monterey Jack cheese
¼ c. reduced-fat blue cheese crumbles
¼ c. chopped green onions
¼ c. chopped celery
Celery sticks and carrots or whole grain crackers for dipping
Heat oven to 350°F.
In medium mixing bowl, use electric mixer on medium speed to beat the cream cheese until smooth.
Slowly add in fat-free ranch dressing and buffalo wing sauce until blended fully.
Remove mixer and use a spoon to stir in chicken, cheeses and celery.
Spread mixture in an ungreased 1-quart baking dish or 9-inch pie pan and cover with foil.
Bake 30 to 35 minutes or until hot.
Stir dip and top with green onions.
Serve hot with crackers or celery sticks.
