Gluten free is growing in popularity lately. People are learning that by cutting out gluten that it can ease many symptoms they are having even they are not suffering from Celiac’s disease. People are figuring out that by cutting out gluten they can get relief from a lot of issues they have been having.
I have recently discovered that my sinus headaches could very well be triggered from eating gluten filled foods. So I have been trying to cut as much gluten out of my diet as I can. Well it has proven much harder than I thought it would be. Most of the gluten-free recipes I found online, were just lacking. Lacking in flavor, lacking in imagination and just lacking in “Hey Make me”. Sorry can’t think of a better way to say it.
I recently received a copy of the Complete Gluten-Free Whole Grains cookbook by Judith Finlayson. Not only is the cookbook focusing on gluten free recipes, it also features whole grains, which has so many extra health benefits.
I love breads and muffins. It is honestly my biggest weakness, well, except for sweets. It is one of the things that make gluten-free so very hard. Enter this new recipe book and I now have options. There are cranberry-orange pecan muffins, old fashion corn bread, and pancakes. There is zucchini fritters, corn cakes, and polenta crostinis.
There is plenty of soups and salads, plus poultry recipes. A yummy chinese fried rice recipe, peppery chicken quinoa and jambalaya. There are fish and seafood recipes, and meat recipes, like sloppy joe zucchini, cuban style hash with fried plantains, and millet-crusted tamales pie. If you prefer meatless meals, you can try rice stuffed eggplant, wild rice cakes, or chile rice. I would be lost without some sweet treat ideas, Tusisian Fruit and Grain cake, chewy oatmeal coconut cookies with cranberries and pecans, or oatmeal shortbread squares.
There are so many great recipes, 125 to be exact. These recipes can help you enjoy cutting gluten out of your diet, whether you have a sensitivity to gluten or are just looking for a way to a variety of whole grains to you meal plan.
