When I was little there were certain things that my Grandmother always made. They were foods that I remember from my childhood and I always crave them. But the days of my Grandmom being in the kitchen are long gone. That doesn’t stop me from wanting the foods I love.
One of these foods is zucchini bread. My Grandpop would grow these massive zucchini a in his garden. I would go out and help him pick them and then run them into the kitchen and help make a fresh batch of bread. My garden never seems to work out that well, so I buy mine from the produce stand on the side of the road, up the street. It is the next best thing.
I was lucky enough to write down her recipe before she forgot it. I do not know where she originally got it but now I can make my own.
Grandmom’s Zucchini Bread
2 cups of shredded zucchini
1 cup oil
1 tablespoon vanilla
2 cups sugar
3 tsp cinnamon
3 cups flour. If you want to make it a bit more healthy use whole wheat flour.
1 tsp salt1 tsp of baking soda
1/2 tsp baking powder
1/2 cup raisins/nuts, optional. I personally do not use it in mine.
Preheat oven to 325 degrees. Grease 2 loaf pans.
Sift flour, salt, baking powder, baking soda, and cinnamon in a bowl.
Beat eggs, vanilla, oil, and sugar together in a bowl.
Add in the flour mixture, slowly.
Once the ingredients are well mixed, stir in the zucchini and raisins/nuts if you are using them.
Pour into the 2 pans. Bake at 325 for 40 minutes. They are done when the knife comes out clean.
Cool for about a half hour, then remove from pans.
