Drunkard Noodles- Thai Dish with Rice Noodles- Easy $10 Dinner

Drunkard Noodles is a simple, quick dinner. It is a quick meal to make with stir-fry rice noodles, which are super thin then it is flavored with soy sauce, basil and lemon zest. It is also perfect for less than $10 dinner.

Ingredients
1 package rice noodles, also called rice sticks or stir-fry noodles
3 cloves of garlic, minced
2 chillies, diced
1 green pepper- diced
1 onion, chopped
1 tomato
2 lemons- zested. Be sure to not get the pith, the white part under the rind. This does not taste good and will make it bitter.
6 basil leaves
4 tsp soy sauce
1/2 tsp sugar
2 tbsp oil
salt to taste

Start by soaking the noodles in water.
While they are soaking, chop the veggies.
Heat the oil in a pan, or wok if you have one.
Sauté the garlic, chillies, onions, and peppers.
Add in the noodles, drained, onions, tomato, lemon zest, basil, sugar, soy sauce, and salt.Drunkard Noodles- Simple Rice Noodle Dish. Easy $10 dinner- The Spring Mount 6 Pack

 

Sauté until the peppers are soft.

    What a wonderful dinner for the summer. Light but filling. So many fresh veggies now that could be added as well. Of course being inexpensive doesn’t hurt either! I haven’t made these kind of noodles at home yet, but going to try.

    This dish looks very delicious! I love Thai curries and also enjoy crisp sauteed veggies, so this meal would become a quick favorite. I like that you added the lemon zest; I’m sure it adds a lot of flavor. Rice noodles are also one of my favorite types of Asian noodle types.
