Tuesday night was rushing around. I had a movie even tot go to, one of my boys stayed later after school and I had to pick him up, and Serenity had a ton of homework. Hubby was sleeping, he works over nights, and Willow wanted lots of attention because she was getting over a cold. The house was trashed, I had been working all day, the kitchen was nowhere near cooking ready. AND I forgot to take anything out of the freezer to make. Long story short: I had no idea how to get dinner on the table and was considering take out. Since take out was not in the budget, AT ALL, I really needed a better idea. Then I remembered the Koch Honey BBQ Chicken Fritters in the freezer. I recently partnered with Koch to try out their line of chicken products.
I grabbed the bag of frozen chicken. The Honey BBQ chicken is pre-breaded and has a honey BBQ glaze on it. Anthony tends to be a bit fussy about BBQ but I had a feeling that these would pass the test. They cook in about 20 minutes. So while they were cooking, I grabbed a can of biscuits from the fridge. I wanted to dinner to be a bit different and a bit special, since it was a special fun night.
I decided to make it a bit different. Instead of serving the chicken as whole fritters , I decided to cut them into 3 pieces and serve is as mini sandwiches. Add it to some corn and carrots, and it was a dinner the kids scarfed down in minutes. I actually had to fight them off from my plate.
If you want to give these a try, you can find them at Wal-mart in the frozen section. They are great to have for a quick meal, a special dinner, or when you are craving wings like crazy.
